Neyyappam

Ingredients

raw rice-2 cup

jaggerry-350 gm

water-1 cup

wheat flour-6 tbsp

cardamom-1 tsp

sesame seeds-1 tbsp

coconut-1/2 cup

ghee-3 tbsp

coconut pieces-1/2 cup

salt-1/2 tsp

coconut oil for frying

Preparation

Soak rice for 3-5 hrs, then strain it from water and grind it with adding jaggerry juice, then pour it to a bowl, add wheat flour, mix it well and make a slightly loose batter. Heat ghee in a pan, add coconut pieces, roast it until turns brown, then add grated coconut and roast until it become golden brown, add sesame seeds and keep aside for cooling. Once it cooled enough add to the batter, add salt and cardamom powder to the batter, mix it well, rest 8 hrs for fermentation.Heat oil for frying, then pour batter with a laddle, fry both sides.
