INGREDIENTS
Jaggery (ശർക്കര ) – 125 gms
Water (വെള്ളം) – ¼ cup
Grated Coconut (തേങ്ങ ചിരണ്ടിയത്) – 2 and 3/4 Cups
Cumin powder – 1/4 Teaspoon
Cardamom powder – 1 and 14 Teaspoon
Dried Ginger powder – 1/4 teaspoon
Roasted Rice Flour (വറുത്ത അരിപ്പൊടി) – 2 cups
Salt (ഉപ്പ്) – ½ Teaspoon
Ghee (നെയ്യ്) – 3 teaspoon
Sugar – 1/2 cup
Water – 1/4 cup
Preparation
For dough, boil water with salt, sugar and salt, then pour it to the rice flour, mix it well, then keep aside for 5 minutes.
For filling, melt jaggerry, then strain it to a pan, then add coconut to the pan, boil it well, then add cumin powder, dry ginger powder, once the filling become dry , turn off flame. In the same way prepare sugar filling.
Take rice flour dough, knead it well, then divide it into equal balls, flatten it in your palm, add filling, then cover it carefully, make perfect shape, set all balls like this, then steam it in a idli steamer.
