Rasmalai
For making Malai
Milk – 3/4 ltr
Vinegar – 2 tbsp
Water – 2 tbsp
Corn flour – 1 tsp ( optional )
Sugar syrup
Sugar – 3/4 cup
Water – 3 cup
For making Ras :
Milk – 3/4 ltr
Nuts – 1/4 cup
Saffron ( optional )
Yellow food color
Cardamom pdr – 1 tsp
Dry rose petals for garnishing
Preparation
For making malai, boil milk, once it heat well pour vinegar and water mix , continue stirring, once the milk become glutten, strain it to a cloth, wash the paneer in cold water, then squeeze it well, add some corn flour and blend it in a mixie jar, make small balls without crack.Boil milk and sugar, put the paneer balls, boil it for 5 minutes then keep aside.
For making rasmalai ras, boil milk until it reduce 30 %,then add sugar, nuts,cardamom and food color, boil 2 more minutes, then turn off flame.Take malai from sugar syrup, and put it in the ras , allow it to cool, then keep in fridge for 1/2 hrs before serving.
