whole coriander 2 tbsp

fennel seed 1 tbsp

cumin seed 1 tsp

cinnamon 1 tbsp

cardamom 1 tbsp

cloves 1 tbsp

dried lemon 1 no

bay leaves 4 to 5

dried red chilli 4 to 5

marinade:

tomato 1 no

onion 1/2 no

garlic 4 to5 no

ginger 2 big piece

lemon 1 big

masala powder 1 1/2 tbsp

chilli powder 1 tbsp

turmeric powder 1/2 tsp

salt

olive oil 1 1/2 tbsp

red food colour 1/4 tsp

chicken with skin 1.2 kg (or less)

olive oil 1 tbsp

piece of coal

Preparation

For arabic masala, dry roast all ingredients in a pan, then grind it into fine powder.

For marination, grind onion,ginger,tomato,garlic and lemon, and make fine paste, then transfer it to a plate, add arabic masala,other masalas, salt, food color,and olive oil, mix all well, marinate chicken with this masala, keep overnight in fridge.Next morning you can fry itin pan.
