Ingredients
For marinate
Chicken – 750g
Onion – 2 ( big size)
Crushed ginger – 1 1/2 tbsp
Crushed garlic – 2 tbsp
Crushed green chilli – 3 tbsp
Tomato – 2 ( medium)
Chopped coriander leaves – 3 tbsp
Chopped mint leaves – 3 tbsp
Chilli powder – 2 tsp
Turmeric powder – 1/2 tsp
Biriyani masala – 1 tbsp
Curd – 2 tbsp
Lemon juice – 1 tbsp
Ghee – 2 tbsp
Oil – 1 tbsp
Salt
For preparing rice
Jeerakasala rice – 500 g (2 1/2 cup)
Water – 3 3/4 cup
Cinnamon – 2
Cloves – 6
Cardamom – 6
Javithri – 2
Star anise – 1
Ghee – 3 tbsp
Salt
For layering:
Fried onion – 1 ( medium)
Fried cashew nuts – 1 tbsp
Fried raisins – 1 tbsp
Coriander leaves
Mint leaves
Ghee – 1 tsp
Biriyani masala
2 tbsp milk + 1/2tsp turmeric powder
Preparation
Take biriyani pot, add onion, tomato crushed ginger,garlic and chilly, pudina and coriander leaves, masalas,curd,lime juice, ghee, and salt , mix all well, then add chicken, marinate chicken with this masala. Rest this for 1 hour.
For rice, boil water, add spice, next add ghee and salt, once it boils add rice, cook rice about 50 %. Pour 1/2 of the rice above the chicken, add herbs, fried onion and nuts, some garam masala powder, milk and turmeric mix and ghee, add second layer, repeat the same, then cover the lid then cook 15 min in low flame, then dum 1/2 hrs, now you can serve it.
