Ingredients
Chicken : 500gm
Potato : 1 big
Carrot : 1 small
Onion : 1 big
Ginger crushed : 1 tbsp
Fennel seeds : 1/4tsp
Pepper powder: 1 tsp
Garam masala : 1/2 tsp
Salt : 1tsp
Thin coconut milk: 1.5 cup
Thick coconut milk : 3/4cup
Curryleaves
Green chilli: 3
Cashew nuts :10 (optional)
Coconut oil : 2 tbsp
Preparation
Heat coconut oil in a pan, add cumin, next add ginger chopped, next onion, saute it well, add salt, add chicken, mix well, next add pepper,curry leaves and chilly, saute it well, now add potato and carrot, then add coconut milk, cook it for 8 minutes, crush cinnaon,cloves and cardamom, add to curry, add thick coconut milk and cashews, mix well, cook in low flame for 2 minutes, finally add coconut oil and curry leaves.
