Dindigul Thalappakkatti Biriyani

Ingredients

shallots

coriander leaves

pudina leaves

garlic

green chilly

spices

cumin

fennel

jeera rice

chicken

chilly powder

turmeric

Preparation

Grind shallots, ginger, chilly, coriander and pudina leaves into coarse paste. Dry roast spices with cumin and fennel, then grind into fine powder.

Heat a biriyani Pot, add ghee , heat it well, add spices, shallots , coriander leaves, pudina leaves and grinded masala, saute it well, next add grinded masala powder, chilly powder, and turmeric powder, mix well, add salt, saute again, next add chicken pieces, mix with masala, then cook it . Once the chicken cooked 75 %, add water , allow it to boil, then add rice, cook it well, finally add ghee, coriander leaves and mint leaves.
