Duck fry

INGREDIENTS

For marination

Duck – 1.5 kg
Turmeric powder – 1/4 tsp
Chilly powder – 1/2 tbsp
Coriander powder – 3/4 tbsp
Garam masala – 1 tsp
Salt – as needed
Curry leaves – 2 to 3 sprig

Water – as needed

For preparation
————————
Coconut oil – 2 tbsp
Onion chopped – 3
Curry leaves – 3 to 5 sprig
Ginger – 1 big piece
Garlic cloves – 20
Green chilly – 3
Small onion – 20
Coconut pieces – 1/2 cup
Turmeric powder – 1/4 tsp
Chilly powder – 1/2 tbsp
Coriander powder – 3/4 tbsp
Garam masala – 1 tsp
Pepper powder – 1 tsp
Tomato small – 2

Preparation

Marinate duckmeat with the ingredients above the list, rest for 1/2 hrs. Then add water and cook until it become dry. Heat a pan, add coconut oil, once it heat well, add onion, after sauting it, add curry leaves, ginger,garlic,chilly crushed, and shallots, mix well and cook for 2 minutes, next add coconut pieces, mix well, next add masalas, mix well, once it turns aromatic add tomato,next add cooked meat, mix all well and cook until it become thick and dry.
