Oottupura recipe

Ingredients

sambar dal-125 gm

for roast coconut

grated coconut-3/4

oil

fenugreek-1 tsp

urad dal-1 1/2 tsp

shallots-5-8

garlic

red chilly

coriander seeds

cumin, fennel-1/2 tsp each

curry leaves

turmeric-1/4 tsp

coriander powder-1 tbsp

other ingredients

vegetables – what you like

onion and ladies finger

tomato

turmeric powder

salt

hing

curry leaves

chilly powder

tamarind juice

for seasoning

oil

mustards

garlic

dry red chilly

curry leaves

chilly powder-1 pinch

Preparation

Cook daal well. For roast coconut, heat oil add ingredients one bye one in the list above, finally add some coriander leaves and turmeric into it, then grind into fine paste. Cook vegetables with cooked dal, turmeric,chilly powder,coriander powder and hing, add tamarind juice, cook for 1 whistle. Heat a pan saute ladies finger and tomato,then add grinded coconut, cooked vegetables then mix together and allow it to boil. Finally temper with the above said ingredients and pour above the sambar.
