Chicken manthi ( kuzhimanthi)

Ingredients

Basmati rice-1 kg

chicken-1 kg

pepper powder-1 tbsp

cumin seeds-1 tbsp

garam masala powder-1 tsp

pepper corn-1 tbsp

onion-1

coriander leaves

sunflower oil-1/2 cup

salt

lemon juice-1 tbsp

red food color

chicken stock-1

capsicum

green chilly

turmeric

charcol

Preparation

Marinate chicken with pepper powder,cumin,garam masala powder, chicken stock, capsicum, pepper, onion, coriander leaves, sunflower oil, lemon juice, red food color and salt. Rest this for 15 minutes. In a biriyani pot, set the chicken in a layer, then cook in low flame.

Cook rice about 75 percent, then strain out from water, put the rice above the chicken, add some green chilly, smoke charcol, then mix the rice and serve it.
