Ingredients
brinjal-3
coconut oil -2 1/2 tsp
coconut -2 cup
shallots-8
dry red chilly-4
coriander seeds -1 tsp
fenugreek-1 pinch
turmeric -1/4 tsp
tomato -2
green chillies -4
tamarind juice, salt, curry leaves
mustard -1/4 tsp
dry red chillies -2
chopped shallots – 2 tsp
preparation
Heat a pan, add oil , coriander, chilly, fenugreek, coconut, shallots and fry until turn aromatic and blend these well, take another pan add oil ,brinjal, turmeric, green chillies, tomato, tamarind juice, salt and cook well. once it cook add coconut mix into it. finally add curry leaves
