Wheat dosa
Ingredients:
1 cup wheat flour
1/2 teaspoon salt
1 cup water (or more as needed)
1 tablespoon coconut oil
1/2 teaspoon mustard seeds
1 tablespoon urad dal
A few curry leaves
1 medium onion, chopped
1 carrot, grated
1 teaspoon ginger, grated
1 green chili, chopped
Salt to taste
3/4 teaspoon chili flakes
Oil for cooking
Preparation
In a mixing bowl, combine wheat flour and salt. Gradually add water while mixing to form a smooth batter. The consistency should be similar to dosa batter. Cover and let the batter rest for 15 minutes. Make the masala:
Heat coconut oil in a pan. Add mustard seeds and let them splutter. Add urad dal and fry until golden brown. Add curry leaves and saute briefly. Add chopped onion, grated carrot, grated ginger, and chopped green chili. Saute the vegetables for 5-6 minutes until they soften slightly. Add salt and mix well. Remove from heat and let the masala cool. Once the masala has cooled, add it to the wheat flour batter. Mix well to combine. Adjust the consistency of the batter by adding water if needed. Add chili flakes and mix again.
Heat a non-stick tawa or dosa pan. Lightly grease the tawa with oil. Pour a ladleful of batter onto the tawa and spread it evenly in a circular motion to form a thin dosa. Cook the dosa on medium heat until the edges turn golden brown and the bottom is cooked. Flip the dosa and cook the other side until golden brown. Repeat the process to make more dosas.
