1 cup maida (all-purpose flour)
1/2 cup wheat flour
Salt to taste
2 tablespoons oil
Warm water as needed

Preparation

In a large bowl, combine the maida, wheat flour, and salt. Add the oil to the dry ingredients and mix well.
Gradually add warm water to the mixture, kneading it until a soft and pliable dough forms. Cover the dough with a damp cloth and let it rest for at least an hour. Divide the dough into equal-sized balls. Roll out each ball of dough into a thin, circular shape, about the size of a dinner plate. Place two rolled-out circles of dough on top of each other, brushing oil between the layers.Roll out the layered dough: Roll out the layered dough into a very thin, almost transparent sheet.Heat a tawa (griddle) over medium heat. Place the rolled-out roti on the tawa and cook until it is lightly browned on both sides.Serve the Rumali roti hot with your favorite curry or use it to make shawarma.
