Here is the recipe for coconut rice dish made with Mussels

Ingredients:

1 cup mussels (Kallummakka)

1 cup coconut milk

1 cup water

1/2 cup rice

1/4 teaspoon turmeric powder

1/4 teaspoon cumin seeds

1/4 teaspoon black peppercorns

1/4 teaspoon cardamom pods

1/4 teaspoon cloves

1/4 teaspoon cinnamon stick

1/4 teaspoon salt

1 tablespoon ghee

1 tablespoon oil

1 onion, chopped

1 green chili, chopped

1 sprig curry leaves

1 teaspoon grated ginger

1 teaspoon chopped garlic

Instructions:

Grind coconut with masala powders, fennel seeds and water Cook the rice in water with turmeric powder, onion and coconut paste until it become tender. Heat ghee and oil in a pan. Add onion, green chili, curry leaves, ginger, and garlic. Fry until the onion is golden brown. Add the fried kallummakkaya to the pan and fry for a few minutes until it is golden brown. Add the cooked rice and coconut milk to the pan. Mix well and cook for a few more minutes until the coconut milk is absorbed. Serve hot with your favorite side dish.This dish is a popular Kerala dish and is often served with fish curry. It is a delicious and healthy dish that is perfect for any occasion.
