Steamed banana cake

Ingredients

2 bananas (not overripe)

1 tablespoon ghee

1/2 cup grated coconut

1 1/2 tablespoons sugar

1/2 cup roasted rice flour

1/2 cup grated coconut

3 tablespoons sugar

2 cardamom pods, husked and ground

Salt to taste

1 cup water

Preparation

Prepare the banana filling:

Heat ghee in a pan. Add 1 1/2 bananas, cut into pieces, and sauté until they soften and turn golden brown.
Add grated coconut and sugar. Mix well and cook for a few more minutes until the mixture thickens.
Remove from heat and let it cool.

Prepare the batter:
In a blender, combine the remaining 1/2 banana, cut into pieces, roasted rice flour, grated coconut, sugar, cardamom powder, salt, and water. Blend until a smooth batter is formed. Assemble and steam:

Grease a small baking dish.
Pour half of the batter into the dish. Top with the cooled banana filling. Pour the remaining batter over the filling.Place the dish in a steamer and steam for 15 minutes, or until a toothpick inserted into the center comes out clean.
