Gooseberry Pickle
Ingredients:
1/2 kg gooseberries
sesame oil-2 tbsp
1/2 tsp turmeric powder
1 1/2 tsp red chili powder
mustard
dry chilly-2
hing-1 tsp
fenugreek powder-1 tsp
ginger garlic and green chilly
1 1/2 cups hot water
1 1/2 – 2 tsp vinegar
salt
Instructions:
Steam gooseberries, then split it, Heat oil in a pan. Add 1 tsp of mustard seeds, 2 dried red chilies, and a few curry leaves. Let them splutter. Then add ginger, garlic and green chilly, saute it well . Add the turmeric powder, red chili powder, hing and fenugreek powder, saute it for a few seconds until the raw smell goes away. Add water, once it starts boil, Add the cut gooseberries to the pan and mix well. Add vinegar to the pan. Mix well and bring to a boil. Reduce the heat and simmer for 5-7 minutes, or until the gooseberries are cooked and the mixture has thickened.Let the pickle cool completely before transferring it to an airtight container. Store in a cool, dry place.
