Udupi Sambar is a South Indian lentil-based stew known for its unique blend of flavors. It’s characterized by its mild sweetness, tanginess, subtle spiciness, and earthy coconut flavor. It’s typically made with toor dal, tamarind, vegetables, coconut, and various spices. The sambar is cooked until the flavors are well-integrated and then served hot with idli, dosa, or rice.

jaggerry

Preparation
Dry roast coconut with spices and hing , then grind it into smooth paste . Wash the toor dal and soak it in water for about 30 minutes. Then, pressure cook it with water, salt, turmeric and hing until it becomes soft. Cook vegetables in a clay pot with turmeric, salt and water. Add cooked dal to the pan, then boil it well, next add coconut paste, then boil it again, add tamarind pulp or juice, add extra hing too, boil it again, add a piece of jaggerry. Finally, season it with curry leaves, dry chilly and mustard.
