Preparation
First, the wheat flour is mixed with salt and water to make a dough.Then, the jaggery, coconut, cardamom, and cumin are ground together to make a filling. Next, the dough is rolled out into thin circles and the filling is placed in the center. The circles are then folded and closed to form the appam. Finally, the appam are cooked on a special griddle called an ‘otta chatti’.
