Vattayappam

Ingredients

Rice flour – 1 cup (appam/idiyappam podi)

Coconut grated – 1/2 cup

Cooked rice – 1/4 cup

Sugar – 4 tbsp

Cardamom – 2

Cashew/rasins – 1 tsp

yeast – 1/2 tsp

Water – 1 cup

Salt – 1/4 tsp

Preparation

To a mixer jar add rice flour, coconut, cooked rice, seeds of cardamom,3/4 cup water and sugar.grind.
it to a fine paste .transfer it to a bowl .add yeast to the batter.add 1/4 cup of water to the mixer jar and take out the batter inside the jar and pour it to the bowl.mix well and add salt.keep it for 4 hours for fermentation.after 4 hours transfer it to a greased pan and steam cook for 20 minutes.place some cashews or raisins on the top of the batter after 10 minutes. Then steam cook again for 10 minutes.
