Malai egg curry
Ingredients
egg – 4
onion – 2 medium size
green chilli – 3+1
garlic – 2 big cloves or 4 to 5 small cloves
milk – 1 cup
cashews or almonds – 15 to 20
coriander powder
pepper powder
coriander leaves
garam masala – 1 pinch
ghee -1/2 tsp
sunflower oil – 1 to 2 tbsp
salt
Preparation
grind onion and 3 green chilli,grate ginger and garlic, heat a kadai add oil, add onion paste and saute well. add salt .once the onion paste sauted well add coriander powder and pepper powder saute for 1 to 2 minutes or till raw smell goes off ..now add milk and mix well , allow it to boil . now add cashew paste and 1/2 cup of hot water,
allow it to boil for 3 to 4 minutes,now add boiled eggs and cook for 2 to 3 minutes… add boiling water to adjust the thickness of the gravy. Now add chopped coriander leaves, a pinch of garam masala and ghee,
mix without breaking the egg.switch off the stove and keep it covered for 10 minutes…serve with porotta, chappathi, dosa, idiyappam etc, it will taste good with ghee rice too.
