Yekhni Pulao

Yekhni Pulao, Afghan special recipe

Ingredients:

Rice Soaked 1kg

Beef 1 kg

Onion 1

Green Chilies 10

Garlic 1

Salt 1.5tbs

Water 1,1/2 cup

Potli-

Coriander Seeds 1 tbsp

Fennel Seeds 1 tbsp

Green Cardamom 4

Black Cardamom 2

Cinnamon 1small piece

Cloves 5

Pulao masala:

1 tsp fennel seeds

1 tsp cumin seeds

7-8 green cardamom

1 black cardamom

1 mace

1/3 nutmeg

1 tsp black pepper

1 cinnamon stick

Cloves 7-8

For Pulao:

1 cup oil

1/2 tsp cumin seeds

1/2 tsp caraway seeds

4-5 green cardamom

1 black cardamom

1/2 tsp pepper corn

4-5 cloves

2-3 bay leaves

1 tbsp garlic paste

1 tbsp salt or as require

1/4 cup curd

Green chillies

Fried onion 2

1 tsp ghee

Rice 4 cup (800g)

Black Pepper 1tbs

For Yakhni:-

1 kg beef

2 tsp salt

5 green chilli

1 inch ginger 1 garlic

1 onion

1 tbsp fennel seeds

2 bay leaves

Water

Pulao masala:

1 tsp fennel seeds

1 tsp cumin seeds

7-8 green cardamom

1 black cardamom

1 mace

1/3 nutmeg

1 tsp black pepper

1 cinnamon stick

Cloves 7-8

PREPARATION

In a pressure cooker, add beef, whole spices, coriander seeds, green chilly, onion, garlic and ginger, then pour water, cook it for 6-8 whistle. Heat oil in a large pan, add onion, fry it well, then set aside, next add whole spices to the pan, after roasting it well, add crushed garlic, mix well, then add cooked beef pieces, then add fried onion, curd and green chilly, mix all well, then add water, squeeze lemon and add salt, let it boil well, now add soaked rice, cook it well, finally add ghee and fried onion, mix it well, then serve it.
