How to prepare
After peeling the skin of the snake gourd and removing all the pulp inside, it can be chopped into small pieces. Add half a teaspoon of turmeric powder, salt and three quarter teaspoon of chili powder to it and mix it well. Then put a cup of grated coconut, 10 small onions, 5 garlic cloves and a small piece of ginger into it in a pan and fry it well. Then add 3/4 teaspoon of coriander powder, quarter teaspoon of turmeric powder and one teaspoon of chili powder and sauté again. After heating it, put it in a small mixing jar, add some water and grind it well.
Now pour one and a half tablespoon of coconut oil in an earthen pan, add 10 crushed shallots and some curry leaves and fry it, then add the padavalanga that we have prepared earlier. Add this and sauté on low flame. Then add a chopped tomato to it and sauté again without adding too much water.
• When the padavalanga is roasted well, add a quarter cup of water, grated coconut and a little more water if necessary and boil it all together. If necessary, you can add salt again, then add a pinch of tamarind the size of a gooseberry and turn off the curry when it boils.
• In another pan, pour a tablespoon of coconut oil and when it crackles, add curry leaves, dried chillies and chopped onions and season well. This can be poured into the curry which has been turned off earlier. Delicious Padavalanga Curry is ready.
