Kuzhimanthi is easier to prepare than biryani, and taste also good. We can make restaurant style Kuzhimanthi at home.
Ingredients used:-
Sella Basmati rice – 1Kg
Chicken – 2Kg
Maggi chicken cube-4
Mandi powder-4 teaspoons
Pepper (whole)-4 teaspoons
Coriander (whole)-2 tablespoons
Oil (vegetable oil or sunflower oil)-200ml
Capsicum – 2
Coriander leaves – 1 cup
Tomato – 1
Green chilly-10
Ginger -1cup
Garlic-4pcs
All spices-10
Food color (red)-1teaspoon
For yellow color – mix 1/4 teaspoon turmeric powder with 1teaspoon water
First marinate the chicken, To prepare the masala, add garlic, ginger, green chillies and tomatoes to a mix jar and grind them well. Add this to the chicken and mix well with chicken stock, manthi masala, capsicum , coriander leaves and a little food colouring. Add 200 ml of sunflower oil. After roasting for an hour, take it in a pan and cook it well on low flame. Next you can cook the rice. For that, boil water in a pot, add some green spices, two dried lemons, enough salt and some sunflower oil. When the water boils well, wash it and add rice. When the rice is three-quarters cooked, turn off the heat and take it out. Add this rice on top of the fried chicken. Add some yellow food color, red food color and green chillies on top of this. Take some charcoal in a bowl, pour oil into it and smoke it. Now add the pot and put the charcoal on top and open the pot and serve.
