It is one of the traditional delicacies of Kerala. It is a good crispy achappam which is not thick at all. Children and adults like it. It is prepared in traditional way by rice soaking and grinding but here a very quick preparation method is mentioned.
Preparation
First, break two eggs into a bowl and add three-quarter cup of powdered sugar to it and mix well.Next add enough coconut milk and mix it and prepare a batter of medium thickness. You can add sesame seeds and mix it. Now heat the oil for frying in a pan, put the mold of achapam in it.When the oil is hot, take the mold and dip three quarters of it in the batter and put it back in the oil. When it separate from mould , you should fry another side and prepare everything like this.
