Sadya Sambar

Sambar is a lentil-based vegetable stew, cooked with pigeon pea and tamarind broth. It is popular in South Indian, Sri Lankan and Maldivian cuisines. The stew has been adapted into Burmese cuisine as a popular accompaniment to Burmese curries.

Ingredients

drumstick

ivy gourd

ash gourd

brinjal

tomato

raw banana

green chilly

shallots

green beans

ladies finger

colocassia

pumpkin

ash gourd

garlic

tuvar dal

turmeric

hing

salt

coconut oil

tamarind

water

sambar powder

curry leaves

coriander

hing powder

dry chilly

chilly powder

coriander powder

Preparation

Cut all vegetables in required size. Cook dal with green chilly, shallots, turmeric and water. Saute vegetables in a pan, by adding masala powders, then add water and cook it well, add tamarind pulp and cooked dal, boil it well, add coriander leaves and curry leaves. Finally, season it with dry chilly, mustard, curry leaves and masala powders.
