Angamali Mango Curry

Ingredients

shallots-20-25

mango-2

turmeric-1 tsp

salt

curry leaves

onion-2

green chilly-2

ginger

chilly powder-1 tbsp

coriander powder-2 1/2 tbsp

turmeric-1 tsp

coconut oil

coconut milk 1 st extract

coconut milk second extract

vinegar-2 tbsp

fennel powder-1/2 tsp

Preparation

Cut mangoes into long pieces, marinate it with salt, turmeric and curry leaves, keep this aside. Mix masala powders in a bowl, add water and make a paste. Take a bottom thick pan, add finely chopped onion, shallots, green chilly, ginger aqnd curry leaves, add turmeric and salt, mix it with your hand, tightly crush it with fingers, add masala paste and mango, add a little coconut oil, mix well, pour water, then turn on flame, add coconut milk second extract, boil it well, once it cooked enough, add fennel powder, then add thick coconut milk, heat it well, then turn off flame. Finally, season it with shallots and curry leaves.
