Ingredients
bitter gourd-1
coconut oil-6 tbsp
mustard-1 tsp
fenugreek-1 tsp
shallots-15
green chilly-2
dry chilly-8-10
curry leaves
jaggerry-150
tamarind-lemon size
turmeric-1/2 tsp
hing-1/4 tsp
chilly powder-1 tsp
Preparation
Marinate chopped bitter gourd with salt and turmeric. After 1/2 hrs of marination, wash it 2 times, then fry it well and keep aside. Heat a clay pot, add coconut oil, then add mustard and fenugreek, let it pop well, next add shallots, green chilly, dry chilly and curry leaves, saute until it become brown. Boil tamarind juice in another pot, then pour it to the clay pot, add masala powders, boil it well, then add fried bitter gourd, add jaggerry and salt, boil it again until it become thick, then turn off flame.
