chicken-1 1/2 kg
curry leaves
for rice
biriyani rice-7 glass
ghee-1 tbsp
dalda-2 tbsp
cinnamon
cardamom
cloves
bay leaves
onion-1/2
water-11 glass
salt
ginger garlic chilly crushed-1 tbsp

lemon-1/2
for garnishing
fried onion,cashew and kismis
milk+turmeric mix
Preparation
In a biriyani pot, add onion, tomato and ginger,chilly and garlic crushed, mix it with hand, then add masala powders,mint and coriander leaves, salt, and curry leaves, mix it again, add chicken , marinate it well and keep it aside. Soak rice for 30 minutes.Heat ghee and dalda in a pan, add whole spices and onion, saute it well, pour water, salt and lemon juice with it, once it starts boiling add rice, then cook the rice about 90%, then strain the rice from water.Take some rice in a plate, add milk and turmeric mix, combine well. Add half of rice above the chicken, add fried onion,casher and kismis, mint and coriander leaves, garam masala and yellow rice, add second layer rice and repeat the same, finally tightly cover the pot and put a weight above it, then dum it for 45 minutes, now tasty kozhikodan dum biriyani is ready.
