Ingredients
for kubboose
lukewarm milk-1 1/4 cup
sugar-1 tsp
sunflower oil-1 tsp
yeast-1 tsp
salt
maida
For falafil
chana
cumin-1 tsp
garlic
coriander leaves
green chilly
lemon juice-1
bread crumbs-1 tbsp
baking soda -1/4 tsp
for mayonaise
garlic-3-4
salt
vinegar-1 tsp
egg-1
sun flower oil
vegetables
cabbage
tomato
cucumber
capsicum
lemon juice
coriander leaves
Preparation
For kubboose, In a bowl, add milk, sugar,salt, yeast, and oil, mix well and keep aside for 10 minutes, then add maida, knead it well and make a smooth dough, keep this aside for 1 1/2 hrs. Take the dough and knead it again, divide it into equal small balls, flatten it into perfect round shape, after that deep fry this in hot oil, once whole shawarma is fried well, cut each into 2 portions.
For falafil, add chana, salt, cumin, garlic, chilly, baking soda, lemon juice and bread crumbs into a mixie jar, crush it well, then make small balls, and deep fry it well.
For mayonnaise, add garlic, vinegar, salt, sugar and oil into a mixie jar, blend it until it become thick.
In a mixing bowl, add vegetables, crushed falafil and mayonnaise, mix all well, then fill this in shawarma pocket.
