Ingredients
For beef masala
Beef——-1 kg
Oil—-as required
Ghee——–2 tbsp
Onion—-5 big (500 gm)
Ginger——-2 tbsp
Garlic—-3 tbsp
Green chilli—-10 crushed
Tomato—-4 sliced
Coriander leaves—1 handful
Mint leaves—-1/2 cup
Curry leaves—few
Curd—–1/2 cup
Lime juice—-1
Garam masala—-1 tsp
Coriander powder——-2 tsp
Pepper powder—– 1/2 tsp
Salt——to taste
Fennel powder—-1/2 tsp
Turmeric powder –1/2 tsp
For rice
Kaima rice / jeerakasala——4 cup
Water—-5 cup
milk-1 cup
Nuts—–3-4 tbsp
Raisins—–3 tbsp
Ghee——2 tbsp
Cinnamon—2 nos
Cardamom—-8-10
Cloves——–10 nos
Lime juice—–1/2
Garlic crushed—-1 tsp
Green chillies—-1/2 tsp
Salt——-to taste
Preparation
Add onion, tomato, ginger ,garlic, chilly crushed, coriander powder, pepper powder, turmeric, fennel powder, lemon juice, garam masala, curd, salt, mint leaves, curry leaves, coriander leaves to a cooker, mix all well , then add beef into it, combine all together, then cook it for 3 or more whistles. Allow the pressure gone completely, after that boil it again for the gravy become thick.
Boil 5 cup w cup water with milk 1 cup, add spices, salt, ginger crushed, chilly crushed, and garlic crushed, add enough salt, once the water start boiling, add soaked rice, cook it until it become perfect texture.
For dum ,set rice and beef masala in layers, add herbs, fried onion, nuts and milk, in between the layers, finally dum it for 20-25 minutes in low flame, then serve the biriyani.
