Ingredients

1 full chicken

1.5 tablespoons vinegar

2 tablespoons salt

1 teaspoon black pepper powder

1 teaspoon Kashmiri chili powder

1 tablespoon ginger-garlic paste

Juice of 1 lemon

10 dried red chilies

1.5 tablespoons coriander seeds

1 small piece of cinnamon stick

3 cloves

4 green cardamoms

1 teaspoon black peppercorns

1 teaspoon cumin seeds

1 tablespoon cashew nuts

1 medium onion, chopped

7 cloves garlic

1 inch piece of ginger

1 tomato, chopped

1 tablespoon coriander leaves

1 tablespoon mint leaves

1 teaspoon salt

1/2 teaspoon turmeric powder

curd -3 tbsp

Preparation

In a bowl, combine vinegar, salt, black pepper powder, Kashmiri chili powder, ginger-garlic paste, lemon juice, turmeric powder, cumin powder, coriander powder, and garam masala. Mix well and marinate chicken with this masala and keep aside, Dry roast the dried red chilies, coriander seeds, cinnamon stick, cloves, green cardamoms, black peppercorns, cumin seeds, and cashew nuts in a pan until fragrant. Let them cool and then grind them into a fine powder. In a blender, combine the onion, garlic, ginger, tomato, coriander leaves, mint leaves, salt, and turmeric powder. Blend until smooth.Take the marinated chicken pieces and coat them with the spice powder and paste. Keep this aside for 5 hrs. Then fry it in a deep pan. Heat the charcoal and place it in an aluminum foil bowl. Add a spoonful of ghee to the charcoal and let it smoke. Place the cooked chicken over the smoking charcoal for a few minutes to impart a smoky flavor
