Ingredients:

For the filling:

2 cups grated jaggery

2 cups grated coconut

1 teaspoon cardamom powder

1/2 teaspoon ginger powder

1/4 teaspoon cumin seeds

For the batter:

2 cups rice flour

1 teaspoon salt

1 tablespoon ghee

2 cups hot water

Other:

Banana leaves

Preparation

In a bowl, combine the grated jaggery, grated coconut, cardamom powder, ginger powder, and cumin seeds. Mix well until everything is combined. In a bowl, combine the rice flour, salt, and ghee. Mix well. Gradually add the hot water to the flour mixture, mixing until a smooth batter forms. The batter should be slightly thick, but not too thick. Cut banana leaves into squares. Place a spoonful of the batter in the center of a banana leaf. Top with a spoonful of the filling. Fold the banana leaf over the filling, sealing the edges. Steam the ela ada for 15 minutes, or until cooked through.
