This video is a recipe for making beetroot achar (beetroot pickle) in Malayalam.

Ingredients:

1 kg beetroot

1/2 cup mustard oil

1/4 cup fenugreek seeds

1/4 cup turmeric powder

1/4 cup red chilli powder

1/4 cup salt

1/4 cup jaggery

1/4 cup vinegar

1/4 cup water

Preparation

Grate the beetroot. Heat mustard oil in a pan and add fenugreek seeds. Once the fenugreek seeds crackle, add turmeric powder, red chilli powder, salt, jaggery, and vinegar.Add the grated beetroot and water to the mixture and mix well.Bring the mixture to a boil and then simmer for 5-10 minutes, or until the beetroot is cooked.
Once the mixture has cooled, store it in a jar.
