500 grams squid (cleaned and cut into rings or small pieces)
2 medium-sized onions (sliced)
2-3 green chilies (slit)
1 tablespoon ginger-garlic paste
1 sprig curry leaves
1/2 teaspoon turmeric powder
1 tablespoon red chili powder (adjust to your spice preference)
1 teaspoon coriander powder
1/2 teaspoon garam masala
1/2 teaspoon black pepper powder
2 tablespoons coconut oil (or any cooking oil of your choice)
Salt to taste

Clean the squid: Rinse the squid under cold running water and remove the transparent backbone. Cut the squid into rings or small pieces as per your preference. Pat them dry with a paper towel.

Marinate the squid: In a bowl, mix the squid pieces with half of the turmeric powder, red chili powder, coriander powder, ginger-garlic paste, and a little salt. Let it marinate for about 15-20 minutes.

Heat oil in a pan or kadai over medium heat. Once the oil is hot, add the sliced onions, green chilies, and curry leaves. Sauté until the onions turn golden brown.

Add the marinated squid to the pan. Stir well and cook on medium-high heat for about 5-7 minutes until the squid starts to turn opaque.

Reduce the heat to low, cover the pan, and let the squid cook for another 5-7 minutes until it becomes tender. Squid cooks quickly, so be careful not to overcook it, as it can turn rubbery.

Add the remaining turmeric powder, black pepper powder, and garam masala. Adjust the salt and spice levels to your taste and mix well.

Continue to cook uncovered for a few more minutes until the squid is well coated with the spices and the roast gets a slightly dry texture.

Drizzle some more coconut oil on top before turning off the heat. This enhances the flavor of the roast.
