Ingredients
for marination:-
Crushed ginger (1 inch long)
garlic (2 nos)
peppercorns -1/4 tsp
fennel seeds
Turmeric powder – 1/2 tsp
Chilli powder – 1/2 tbsp
Garam masala – 1/2 tbsp
Coconut oil – 2 tbsp
Lemon juice – 1 tbsp
Curry leaves and salt.
Masala ingredients
Mutton-1 kg
Big Onion -1/2
Small Onions-15 nos.
Cinnamon sticks – 4-5
Star anise – 2
Cloves – 4-5
Peppercorns – 1/4 tsp
Bay leaves – 2
Cardamom – 6-7
Fennel seeds/Perumjeerakam – 1/2 tsp
Ginger – 1 tbsp (Crushed )
Garlic – 7 nos (Sliced )
Green chilli – 10 (adjust as per your taste)
Turmeric powder – 1/4 tsp
Chilli powder – 1 tsp
Coriander powder – 1.5 tsp
Garam masala – 1.25 +1/4 tbsp
Curry leaves.
Coconut oil
Salt
Hot water
Preparation
Marinate mutton with above noted ingredients, rest it for 2 hrs after marination. Heat oil in a pressure cooker, add wholw spices, after roasting it well add ginger crushed and garlic chopped, saute it well, add curry leaves, onion and shallots, add chilly after sauting onion, add salt too, next add masala powders, mix it until the raw smell gone, now add mutton pieces, mix it with masala, cook it 10 minutes, now add hot water, then close the lid and cook it well. Once the pressure is gone open the lid, then boil it for 15 minutes, finally add curry leaves and oil.
